Cesar Salad

Romaine Lettuce, torn
(Approx. 1 cup per person)
½ cup cooked, chopped low sodium bacon
1 cup croutons
1 cup finely chopped kale (optional)
¼ cup fresh parmesan cheese

Dressing:
4 tbsp. flax oil or olive oil
1 – 2 cloves garlic (to taste), crushed
1 tbsp. fresh squeezed lemon juice
1 tsp. Worcestershire sauce
Adjust ingredients according to preferred taste.

Puree with a hand blender all the ingredients for the dressing ahead of time to allow the garlic to blend its flavor.
Toss the romaine lettuce and kale*.  Toss the lettuce mixture with the cesar dressing and add the rest of the ingredients on top.   Serve immediately.

*kale is a dense green leaf found in the collard greens section; it is a good way to add extra calcium to your diet.
