Quick and Easy!

Curried Zucchini Soup

 ¼ cup butter
1 cooking onion
6 – 8 small to medium size zucchini, chopped
Enough filtered water to cover vegetables
1 heaping teaspoon of mild curry
Salt & pepper to taste


Sauté onions and butter.  Add zucchini and water.  Bring to boil and reduce to a simmer.  Simmer until zucchini is tender.  Add curry and use a hand blender until smooth.  Simmer for 15 minutes.  Add salt & pepper to taste.  Optional:  dollop of sour cream when serving.
