Fish and Chips

Fish

4 large pieces of Halibut
½ cup plain yogurt
1 cup unseasoned bread crumbs
1 tsp. vegetable seasoning

 

Chips

4 large white or sweet potatoes
(Peeled and cut into French fries)
Olive oil
Salt to taste

Preheat oven to 450 degrees.
Peel and cut sweet potatoes into french fries and place in a large bowl.  Drizzle them with olive oil and salt to taste (½ tsp.).  Make sure all fries are covered.  Place them on a baking sheet and roast for 40 minutes.

Pour the yogurt on a large flat plate and mix the seasoning into it.  Pour the bread crumbs on another large flat plate.  Lightly cover one piece of fish with the yogurt/seasoning mixture and then place it in the bread crumbs.  Pat the fish into the bread crumbs so that there is a thick covering.  Flip the fish over and do the same for the other side.  Place the fish on a flat perforated baking pan. 

When the timer goes, pull the french fries out of the oven and flip them over and put them back in to continue cooking.  Bake the fish on the top rack for approximately 10 minutes, depending on how thick they are.  Remember: never over cook fish.
