Greek Fish

˝ red onion, well diced
1 zucchini, well diced
1 clove garlic, crushed
1 large tomato, diced
1 tbsp. basil
4 large halibut pieces or any preferred white fish
1/3 cup crumbled feta cheese
Pepper to taste
 

Preheat oven to 400 degrees.  Sauté garlic and onions in olive oil for 2 minutes.  Add zucchini, tomatoes, basil and pepper and continue to sauté for another 3 minutes.  In a large baking pan add just enough water to cover the bottom and place the halibut in it.  Top the halibut with the rest of the ingredients cover and bake for approximately 20 minutes; or until just under cooked.  Remove from the oven and let stand for 5 minutes.  Serve with rice and steamed veggies.
