PizzaPre-made pizza crust
Or Pita bread
Or prepared pizza dough
1 large chicken breast, cooked and thinly sliced
1 large red pepper, thinly sliced
4 large mushrooms, thinly sliced
½ red onion, thinly sliced
1 package shredded mozzarella cheeseSauce:
5 tbsp. olive oil
3 cloves garlic, crushed
1 large ripe tomato, diced
3 tbsp. dried basil
¼ tsp. balsamic vinegar
2 sun dried tomatoes, finely dicedPreheat oven to 400 degrees
In one roasting pan cook chicken completely through. In another roasting pan roast the red peppers and onions for ½ hour. Meanwhile, pour olive oil in a heavy fry pan and sauté the garlic, tomatoes and basil until tomatoes are soft. Reduce heat to a gentle simmer and add the sun dried tomatoes and balsamic vinegar. Allow to simmer until ready to add to pizza.When the chicken and peppers are cooked, place the pizza crust or rolled out dough on a baking sheet. Spread the sauce over the entire crust. Add all the other ingredients evenly over the crust. Add a thin layer of shredded cheese over all the ingredients.
Cook pizza crust according to package
If using pita bread cook at 350 degrees for approximately 5 minutes and then broil for 1 – 2 minutes.
