Lemon Rice

1½ cups water
1 cup jasmine or long grain rice
1 tbsp. fresh squeezed lemon juice
1 tbsp. lemon rind
1 green onion, finely chopped

This rice would go well with chicken or white fish.

Stove top:
Follow the directions on the rice package for proper measurements of rice to water; otherwise use the measurements above as a guideline.  In a sauce pan, bring water to a boil.  Add the rice and lemon rind and a pinch of salt.  Reduce heat, cover and simmer for about 20 minutes or until water is gone. Before serving, mix in green onion.

Rice cooks perfectly in a steamer and you don't have to worry about burning it.
