Magic Salmon
(Lemon and Cilantro)
 
1 large, thick piece of salmon – enough for how many people are eating
Balsamic vinegar
Tamari soy sauce
Fresh cilantro, washed and diced
1 fresh lemon
 

Preheat oven to 400 degrees.
Place salmon in an appropriate sized baking dish.  Drizzle enough balsamic vinegar over the salmon to almost cover it.  Drizzle soy sauce (sparingly) over the salmon.  Cut four full slices from the lemon and place them on top of the salmon. Cover the salmon with diced  fresh cilantro and squeeze the remaining lemon over everything.  Cover and bake for 20 minutes @ 400 degrees.  Cook until almost cooked through and remove from oven.  Let it stand in its own juices for 5 minutes or until fully cooked.  DO NOT OVER COOK!!!  Serve with couscous and steamed vegetables.
