SPELT MUFFINS
2 ¼ cups spelt
flour
¼ cup unrefined sugar or honey
1 tbsp baking powder
½ (or less) tsp salt
1 ¼ cups milk or milk alternative
3 eggs, beaten
1 tbsp oil
Preheat oven to 425 degrees. Grease and flour 12 muffin cups. Combine all dry ingredients, including sugar. Beat together milk, eggs, and oil. Mix with dry ingredients just enough to moisten. Fill muffin cups 2/3 full with batter and bake for 17 minutes, or until lightly brown in color.
