Smoked Tofu Lettuce Wraps
1 large
shallot, minced
2 cloves garlic, minced
2 tbsp. minced ginger root
½ medium jalapeno, minced
1 tsp. peanut oil
3 slices Tea Smoked Tofu, diced
1 medium red bell pepper, cut into ¼ inch cubes
2 tsp. lite soy sauce, or to taste
1 tsp. brown sugar or raw sugar (optional)
1 tsp. fresh lemon juice
½ cup chopped cilantro
¼ cup dry-roasted unsalted peanuts, or to taste
12 butter or bibb lettuce leaves, washed & dried
In a large skillet over medium-high heat, sauté shallot, garlic, ginger, and jalapeno in oil for 3 – 4 minutes, until softened.
Add tofu and bell pepper, and sauté until tofu begins to brown, about 7 minutes. Stir in soy sauce, sugar, if using, and lemon juice. Cook until liquid evaporates, about 1 minute.
Remove from heat and stir in cilantro and peanuts. To serve, place lettuce leaves on a platter and pass tofu mixture. Diners spoon some tofu mixture into a leaf and roll it up to eat out of hand.
