Trout with a Bite

1 large, thick piece of Trout – enough for how many people are eating
½ red onion, diced
1 clove garlic, minced
1 large tin unsalted diced tomatoes
(or 5 fresh diced tomatoes)
2 tbsp. Sucanat (raw sugar)
2 tbsp fresh squeezed lime juice
1 tbsp. Dijon mustard
1 tbsp. chili powder
2 tsp. Worcestershire sauce
¼ tsp. cumin and cayenne pepper
 

Preheat oven to 400 degrees.
Sauté onions and garlic in olive oil for 2 minutes.  Add diced tomatoes and continue to cook for 5 more minutes.  Add all other ingredients (accept trout) and let simmer for 10 minutes.  Puree the tomatoes into a smooth sauce.  Place Trout in a large deep baking dish.  Pour tomato sauce over Trout, cover and bake for approximately 20 minutes.  Remove from heat just before the Trout is cooked through and let stand for 5 minutes.  Serve with favorite side dish and steamed veggies or salad.
