Turkey Chili

2 large tins diced, unsalted tomatoes
1 large tin mixed beans, rinsed and drained
1 large red pepper, diced
1 large green pepper, diced
2 large carrots, peeled and diced
3 celery stalks, diced|2 cups mushrooms, diced
1 large onion, diced
1 clove of garlic, crushed
1 package ground turkey, cooked
3 tbsp. chili powder
˝ tsp. chili peppers or to taste
1 tsp. cumin
 

Sauté the garlic, onions, celery and chili peppers in olive oil for 5 minutes.
If you have a crock pot or slow cooker, add all the ingredients and turn on low for the day.
 
Or, in a large pot add all the ingredients and bring to a gentle boil.  Reduce heat to low, cover and simmer for 1 hour or at least until vegetables are soft.
