Whole Roasted Chicken

large whole chicken, uncooked
2 cups cooked rice
1 cup mushrooms, diced
1 medium onion, diced
1 small apple, peeled and diced
2 cloves garlic, crushed
2 tbsp. chicken seasoning
Salt and pepper to taste
Preheat oven to 375 degrees.
Sauté garlic, onions and mushrooms until most of the moisture is gone. Mix apples, seasoning and sauté with the rice. Stuff the mixture into the chicken and place in a roasting pan. Add approximately 1 inch of water to the bottom of the roasting pan. Add carrots, sweet potatoes or any favorite vegetables around the chicken. Calculate cooking time according to the weight of your chicken. (approximately 20 minutes per pound or ˝ kilogram) Generally a large roasting chicken takes 2 – 2 ˝ hours. Take advantage of your pre-programmed oven if you have that option.
