Vegetarian PizzaPre-made pizza crust
Or Pita bread
Or prepared pizza dough
1 large red pepper, thinly sliced
3 sun dried tomatoes, diced
4 large broccoli florets, diced
4 large mushrooms, thinly sliced
˝ red onion, thinly sliced
Any favorite vegetables will do!
1 package shredded mozzarella cheeseSauce:
1 large tin unsalted tomato paste
1 tsp. olive oil
3 cloves garlic, crushed
1 tbsp. dried basil
1 tsp. dried oregano
Salt and Pepper and chili peppers to taste
Preheat oven according to pizza crust directions - or - preheat oven to 375 degrees.
In a sauce pan, sauté the garlic, basil and oregano and chili pepper (optional) for 2 minutes. Add the tomato paste and allow to simmer until ready to make pizza. If the tomato paste is too thick to 'simmer' add 2 - 3 tbsp. of water to prevent it from burning. Meanwhile dice all your favorite veggies into bite size pieces. Optional: slightly sauté mushrooms, onions and sun dried tomatoes to enrich the flavors.Use the back of a large spoon to spread a generous even layer of the tomato paste over the pizza crust. Add the veggie toppings evenly and cover the entire pizza with mozzarella cheese. Do not make the cheese too think or it will overwhelm the rest of the flavors. Cook the pizza according to pizza crust package - or - cook for 6 minutes at 375 degrees and then broil on top shelf for 2 more minutes or until cheese is slightly brown and bubbling. Let stand for 5 minutes before serving.
